Spinach with Mushrooms and Leeks

Ingredients

  • Spray oil
  • 2 small mushrooms sliced
  • ½ small leek, sliced
  • ½ cloves of garlic, minced
  • 70g fresh spinach
  • ¼ tsp dried thyme
  • Black pepper to taste
  • Pinch chilli flakes
  • 1 tsp red wine vinegar

Method

  1.  In a large pan heat oil and sauté mushrooms, leeks and garlic until tender. Add extra water if needed. 
  2.  Add spinach and cook until wilted. Add thyme, black pepper and chilli flakes. 
  3.  Cover and cook on low until spinach is completely wilted. Stir in vinegar.
