Spinach with Mushrooms and Leeks

Ingredients
- Spray oil
- 2 small mushrooms sliced
- ½ small leek, sliced
- ½ cloves of garlic, minced
- 70g fresh spinach
- ¼ tsp dried thyme
- Black pepper to taste
- Pinch chilli flakes
- 1 tsp red wine vinegar
Method
- In a large pan heat oil and sauté mushrooms, leeks and garlic until tender. Add extra water if needed.
- Add spinach and cook until wilted. Add thyme, black pepper and chilli flakes.
- Cover and cook on low until spinach is completely wilted. Stir in vinegar.
