Ingredients

  • ½ red capsicum, sliced and seeded
  • ¼ yellow capsicum, sliced and seeded
  • Spray oil
  • ½ garlic cloves, crushed
  • Squeeze of lemon juice 
  • Chopped fresh parsley, to garnish

Method

  1.  Grill capsicum halves for about 5 minutes, until skin has blackened and blistered.
  2.  Put into a plastic bag, seal and leave for 5 minutes.
  3.  Take the capsicum from the bag and peel off the skins.
  4.  Discard skins and slice into thin strips.
  5.  Add crushed garlic to peppers, a good squeeze of lemon juice and sprinkle with black pepper.
  6.  Mix well, cover and marinate for 2-3 hours, stirring the mixture once or twice.
  7.  Garnish with fresh parsley.
