Mixed Bean and Pineapple Salad

  • 155g can of mixed beans
  • ½ cup cooked green beans
  • 70g of canned chopped drained pineapple pieces (reserve a tablespoon of juice)
  • ½ small onion
  • ½ medium peeled and sliced red capsicum


  • ¼ cup concentrated tomato soup 
  • 1 tsp white vinegar 
  • 1 tsp unsaturated oil 
  • 1 tablespoon reserved pineapple juice (20mL)
  • ½ teaspoon sugar 
  • Garlic salt to taste


  1. Drain and mixed beans.
  2. Toss with cooked green beans, pineapple, Spanish onion and red capsicum.
  3. Mix tomato soup, vinegar, oil, pineapple juice, sugar and garlic salt together.
  4. Add to bean mixture and refrigerate for an hour or more to allow flavour to blend.
  5. Use any combination of dried or canned beans that are on hand keeping quantities the same.
