Ingredients

  • ¼ medium green capsicum
  • ¼ medium red capsicum
  • ½ medium zucchini
  • Low calorie vegetable spray oil
  • 1 teaspoon gluten free soy sauce

Method

  1.  Cut vegetables into thin strips.
  2.  Place the vegetables on a double layer of heavy-duty foil.
  3.  Lightly spray with olive oil spray; drizzle with soy sauce.
  4.  Fold foil around vegetables and seal tightly.
  5.  Grill, covered, over medium heat for 10-15 minutes or until vegetables are crisp-tender.
