Ingredients

  • 1 garlic clove, crushed
  • ½ teaspoon finely grated orange rind
  • 2 firm roma tomatoes
  • Black pepper
  • Shredded basil leaves to garnish

Method

  1.  Mix garlic, orange rind and pepper.
  2.  Chill for a few minutes.
  3.  Preheat oven to 200°C.
  4.  Halve the tomatoes 
  5.  Place the tomatoes in an oven proof dish and the spread the garlic mixture over each tomato half.
  6.  Bake tomatoes in the oven for 15-25 minutes, depending on the size of the tomato halves, until just tender.
  7.  Serve sprinkled with basil.
