Ingredients
- 2 cups of Baby spinach leaves
- 100g diced roasted pumpkin
- 1 small can of corn drained
- 1 tablespoon of parmesan cheese shavings
- 80g of grilled lean chicken breast piece, sliced
- 2 teaspoon of balsamic vinegar
Method
- Add spinach, pumpkin, corn to a bowl.
- Top with grilled chicken pieces & parmesan cheese.
- Drizzle balsamic dressing over the top.
