Ingredients

  • 2 cups of Baby spinach leaves
  • 100g diced roasted pumpkin
  • 1 small can of corn drained
  • 1 tablespoon of parmesan cheese shavings
  • 80g of grilled lean chicken breast piece, sliced
  • 2 teaspoon of balsamic vinegar

Method

  1.  Add spinach, pumpkin, corn to a bowl.
  2.  Top with grilled chicken pieces & parmesan cheese.
  3.  Drizzle balsamic dressing over the top.
